Spooktacular Pumpkin Bread

To celebrate the season, we are sharing a spook-tacular, healthy recipe below:

Pumpkin Bread

Ingredients

3/4 cup mashed pumpkin
1/2 cup oil
2 large eggs
2 cups sugar
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon

Directions

  1. Preheat oven to 350°F.
  2. Stir together sugar, oil, pumpkin, and eggs.
  3. In a separate bowl, combine remaining ingredients.
  4. Add flour mixture to pumpkin mixture and stir until moist.
  5. Pour batter into a greased loaf pan and bake for 1 hour.

*Recipe Tip: Top with chopped walnuts or pecans for added crunch.
