Spooktacular Pumpkin Bread

Published on October 23, 2018

At Greater Boston Food Bank, we have a team of registered dietitians that oversee the nutritional value of the food we distribute. To better assist our neighbors, our dietitians carefully select healthy recipes and post to Click ‘N Cook to help our neighbors create as many healthy meals as possible for their families. To celebrate the season, we are sharing a spook-tacular, healthy recipe below:

Pumpkin Bread

3/4 cup mashed pumpkin
1/2 cup oil
2 large eggs
2 cups sugar
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon

  1. Preheat oven to 350°F.
  2. Stir together sugar, oil, pumpkin, and eggs.
  3. In a separate bowl, combine remaining ingredients.
  4. Add flour mixture to pumpkin mixture and stir until moist.
  5. Pour batter into a greased loaf pan and bake for 1 hour.

*Recipe Tip: Top with chopped walnuts or pecans for added crunch.
